German Chocolate Bundt Cake

I love chocolate cake, especially German chocolate. This recipe is very moist and delicious and is great for parties. I just made this cake to celebrate my father's birthday. Everyone enjoyed it, and I hope you will too!

This cake can be made as a three layer cake or as a bundt cake.

Recipe:

Cake:

1 4 oz package of baker's sweetened chocolate

1/2 C boiling water

1 C butter, softened

2 C sugar

4 egg yolks

4 egg whites

1 tsp vanilla

2 1/2 C cake flour

1 tsp baking soda

1/2 tsp salt

1 C buttermilk

For a bundt cake, preheat the oven to 325 degrees or 350 degrees for a 3 layer cake.

Cream the sugar and butter together. Add the egg yolks.

Melt the chocolate in the boiling water and mix into the butter/sugar/egg mixture. Add the vanilla.

Add the four, baking soda, salt and buttermilk. Mix.

In a separate bowl, beat the egg whites with an electric mixer until soft peaks form. Fold the egg whites into the batter.

Grease a bundt pan or 3, 8 inch cake pans. Lightly sprinkle the insides of the pans with sugar.

Pour the batter into the pans of your choice. From experience, a typical-sized bundt pan will not hold all of the batter and will overflow if overfilled. Only fill the bundt pan about 2/3 full. To prevent waste, I usually using the remaining batter to make a few cupcakes.

Bake:

Bundt Cake: Bake for 1 hour to 1 hour and 15 minutes at 325 degrees.

3 Laker Cake: Bake for 30 - 40 minutes at 350 degrees.

Let the cake cool for 15 minutes before removing from the pans. Cool completely before frosting.

Frosting:

2 C evaporated milk

2 C sugar

6 beaten egg yolks

1 C butter

2 tsp vanilla

2 1/2 C coconut

2 C chopped pecans

In a large sauce pan, combine the milk, butter, sugar, egg yolks and vanilla. Cook on medium heat for 12 minutes. Mix in the coconut and pecans. Pour into a bowl and refridgerate for half an hour or until thickened.

Frost the cake and enjoy! A bundt cake can also be sliced horizontally and a layer of frosting can be spread between the two layers. This recipe makes a lot of frosting so there will definitely be enough to do this.

Uh oh. This one is going to be my favorite. Oh dear, I need to step up my exercise program! :)

I'll have to do some experimenting to cut back on the cow milk products but have had good success doing so with other recipes. I know it won't quite be the same, but with a recipe like this its worth a try for we who are allergic. Thanks for the inspiration.

I'm glad you enjoy this recipe! You could replace the cow's milk with soy or rice milk and still have great results.
